Almonds
Nutrition
Almonds are low in carbs but high in healthy fats, protein and fibre. They are a great source of protein, and contain important nutrients including vitamin E, selenium, zinc, calcium, magnesium and B vitamins, especially folate and biotin (vitamin B7).
Benefits
The fat in the almonds is a monounsaturated fat which helps to protect the heart by maintaining levels of (good) HDL cholesterol versus (bad) LDL cholesterol. Almonds are high in antioxidants that can protect your cells from oxidative damage, a major contributor to aging and disease. Because of their remarkably high amount of magnesium they contribute to control blood sugar.
Ways to eat
The almonds that are sold in stores usually have the shell removed, revealing the edible nut inside. They are sold either raw or roasted.
Almonds may be eaten on their own, raw, or toasted; they are available sliced, flaked, slivered, as flour, oil, butter, or almond milk.
